Tea plants (Camellia sinensis) contain 5-6% caffeine that is responsible for the stimulating effect of the beverage. As the tolerance to caffeine varies among individuals, low caffeine tea would be an ideal alternative.
Food and beverages in general rich in poly-phenols with antioxidant activity are highlighted as a potential factor for risk reduction of lifestyle related diseases. Coffee and green tea shared 50% and 34% of TP( total poly-phenols) consumption in beverages, respectively and contribution of each of the other beverages was less than 10% TP contents in 20 major vegetables and 5 fruits were 0-49 mg and 2-55 mg/100 g, respectively. Antioxidant activities, Cu reducing power, and scavenging activities for DPPH and superoxide, of those samples correlated to the TP contents (p < 0.001).Beverages, especially coffee, contributed to a large share of the consumption of poly-phenols, as antioxidants, in the Japanese diet.
Epidemiol evidence suggests a role for tea catechins in reduction of chronic disease risk. However, stability of catechins under digestive conditions is poorly understood. Green tea water extracts were formulated in beverages providing 4.5, 18, 23, and 3.5 mg per 100 mL epicatechin (EC), epigallocatechin (EGC), epigallocatechin-gallate (EGCG), and epicatechin-gallate (ECG), respectively. Common beverage additives; citric acid (CA), BHT, EDTA, ascorbic acid (AA), milk (bovine, soy, and rice), and citrus juice (orange, grapefruit, lemon, and lime) were formulated into finished tea beverages at incremental dosages, in vitro it is stimulating gastric and small intestinal conditions with pre- and post-digestion catechin profiles assessed by HPLC (high pressure liquid chromatography). The catechin stability in green tea was poor with <20% total catechins remaining post-digestion. Teas formulated with 50% bovine, soy, and rice milk increased total catechin recovery significantly to 52, 55, and 69% respective, as well as EGC, EGCG, EC, and ECG to 74, 54, 82, and 45% respectively. These data provide evidence that tea consumption practices and formulation factors likely impact catechin digestive recovery and may result in diverse physiological profiles.
The vitamin B12 concentration in the green tea extract poured out from the teapot was measured to be 849- 5 pg/100 mL. The average concentration of 5 different green tea beverages from the markets was 280-45 pg/100 mL. The lower content of vitamin B12 in the tea beverages may be due to the supplemented ascorbic acid added in the process of manufactured since the content of vitamin B12 in the solution was reported to decrease in coexistence with ascorbic acid. In fact the concentration of ascorbic acid in the tea beverages, 35.22- 8.27 mg/100 mL in average, was six times higher than that of the poured tea, 5.87- 0.66 mg/100 mL. The effect of ascorbic acid added during the tea extraction on the vitamin B12 concentration, the addition of ascorbic acid at the same concentration of the tea beverages decreased only 7% of the vitamin B12 concentration in the poured tea compared to 67% decrease observed in the tea beverages. Moreover, the effect of heating at 120 oC under pressure after the addition of ascorbic acid showed no difference in quality. This indicated that green tea poured out from the teapot, though in a small quantity, was a better source for vitamin B12 than the tea beverages on markets.
